Rice Flakes Porridge

I discovered a new recipe in an Ayurveda magazine.

It is super fast to make, tasty, feels like a big hug when you eat it and is done in no time.

Here's what you need:

  • 100 gr rice flakes, rinsed and drained, red rice is best.
  • 100 ml milk (I used half water and half milk); you can also use any plant milk.
  • 1/2 tsp cardamon powder
  • 1 bay leaf
  • 1/2 tsp sugar/jaggery/coconut sugar
  • 1 tbsp cocoa nibs
  • 1 tsp ghee/coconut oil optional

How to make it:

Add all ingredients, minus the cocoa nibs, to a medium-sized pot, bring to a boil, and let it cook for a couple of minutes.

Transfer to plate, stir in the cocoa nibs and ghee/coconut oil.

Enjoy.

The best to use are red rice flakes; they are nutritious and made from whole grains. Red rice flakes are a good source of fibre, protein, and antioxidants.

The cardamon helps to digest the milk, whatever you choose. The cocoa nibs offer texture, are full of antioxidants, and add more fibre.

This is a great breakfast for a busy day. It is filling, grounding and feels, as mentioned, light.
