Leftovers, yay or nay?

What are you doing with your leftovers? Are you eating them? How long after are you eating them?

What does Ayurveda have to say to that?

When my teacher told us that food gets old after 3 hours, I thought, wow, that's a bit extreme.

He explained that pranic energy, not calories or nutrients but the value of food in nourishing you, diminishes pretty fast.

Leftovers are:

  • are difficult to digest.
  • contribute to gut issues.
  • leave you feeling sluggish and depleted.

So, what to do with your leftovers?

The best way—I know it's not easy—is to cook the right amount of food. It's a matter of observing how much is left over and cooking less or more next time.

Consider cooking your lunch and dinners simultaneously by doubling the amount. You can prepare your food in the morning and then keep it warm in a thermos, Instant Pot, or food warmer, set to a temperature of at least 60 degrees to prevent bacteria growth.

Sit down on a Sunday, plan your weekly meals, and look at what you can prep in advance. You can clean and cut vegetables, soak nuts and beans, batch-grate ginger or spice mixtures, and make dressings or batters. Store them in the fridge in glass containers until you want to use them.

Preparation seems like killing spontaneity, but it does help on so many levels and makes your life easier.

If you are cooking with leftovers in mind to make life easier, maybe prepping ahead helps you eat fresh food with more energy, easier to digest, and less inflammatory qualities.
